Course Description:  In this year-long high school level course, students will learn about all aspects of the culinary industry.  They will plan, prepare, and serve food in a variety of settings. Upon successful completion of the course, students are able to continue on the Culinary Career Pathway at GHS by going directly into Culinary 3-4.  

Areas of study will include:

  • Kitchen safety and accident prevention
  • Food safety, sanitation, and hygiene methods used in commercial kitchens
  • Kitchen and cooking terminology
  • Cooking methods
  • Proper use of service equipment, tools, and utensils
  • Knife cuts
  • Principles of baking and food chemistry
  • Cake and cookie decorating
  • Menu planning, preparation, presentation, plating, and garnishing
  • Event planning, cost, and time management
  • Table and buffet service
  • Handling money/fundraising
  • Nutrition, diet, and wellness
  • Foods from around the world
  • Culinary career exploration
  • Collaboration, teamwork, and leadership

Students may sometimes be asked to work an after school event or fundraiser.  Participation in activities outside of class is completely voluntary and will not impact a student’s grade.  A suggested supply for this class is a pocket folder or binder for organizing recipes and notes. Monetary donations are also appreciated, as well as items from the “Wish List” posted on our class web page on the school website.  Please feel free to contact me with any questions you may have.
